Morcón is similar to chorizo, but it differs in that morcón is stuffed into the large intestine of 100% Iberian pigs. Additionally, the meat used for making morcón is usually of a higher quality than those used for making chorizo. It comes vacuum-packed and, depending on availability, in a canister.
