Salsa Sosegada (Tabasco-style sauce)

Sosegada is a product of time. The time necessary to ferment bird's eye chilies with bitter orange peel and salt, and to macerate the superb cellar vinegar, and the rest of the Oloroso wine, making a Gourmet sauce.
